  • Pumpkin ravioli

We suggest to prepare the filling 3 day before using it.

Filling:
•  Pumpink (dark green crusted)
• Amaretti biscuits, minced
• Parmigiano Reggiano cheese grated
• Savoiardi biscuits minced or grated bread
• Lemon zest

 

Wash and chop the pumpkin. Steam it in the oven or in the pressure cooker. Take the crust off. Sift the pumpkin and put the flesh in a cloth, hang it up for a night in order to take out the water remained. The day after, add the above listed ingredients. Mix it all with hands. Put in the fridge for a day.

Pasta:
Flour durum wheat
Eggs
oil
water
salt
Prepare a vulcano wtih flour. Add eggs. Mix them. Add the other ingredients. Mix it with hands. Leave the dough in fridge for an hour. Spread out or roll out the dough and put fillings balls. Close it in ravioli style. Cook it just for 2 minutes. Eat it.
